Our Maibock starts with a base of the finest German heirloom barley malt as well as German specialty toasted and caramel malts. It undergoes a long traditional step mash to maximize malt quality before being hopped in the kettle with Spalter Select and a bit of Saphir near the end of the boil. Once fermentation is complete, we lager and spund until proper maturation and carbonation is achieved. These heller bocks, or strong blonde lagers, are brewed to celebrate the coming of Spring and are characterized by their deep malt flavor and slightly warming alcohol while remaining relatively dry.
