The bouquet of morning apple orchard, hay and leather introduces this artisanal French cidre which tastes of farm and barn and musty earth. Structured and complex in the tradition of fine sparkling Norman cidres , it is versatile with restrained sweetness to highlight the apples balanced with pleasant acidity and engaging funk which lingers in the finish. It is made with only yeast and eight varieties of heirloom, estate, cidre apples farmed according the principles of "agriculture raisonnée." Pairs with meats, strong flavors and spicy foods, cheeses and desserts.
